Put cottage cheese into a food processor and puree until smooth for about 2 to 3 minutes.(If using large curd cottage cheese, this may take longer than 3 minutes.) Scrape the sides of the bowl every so often to ensure that all the cottage cheese curds are blended up well.
Add kimchi to food processor and pulse until well combined, about 30 seconds to 1 minute. If you want some bigger chunks of kimchi in your dip, save some to put in at the end and just pulse it a few times to combine.
Pour dip into a serving bowl. Serve with your favorite chips, crackers, or vegetables.

Tips and TricksWhat if I really don’t like cottage cheese?If you just can’t stand to mix cottage cheese with kimchi, try low fat cream cheese (Neufchatel cheese). Regular yogurt will make the dip too runny. You can also try Greek yogurt and its tangy flavor will go great with kimchi.In a pinch, you can use a combination of sour cream and mayonnaise, just know that you are probably going to watch how much you eat since it will have more fat and calories at this point.Not a fan of kimchi?That’s okay! If you enjoy spicy foods and crunchy foods, you should give this dip a try. The kimchi has a tender crunch in this dip, reminiscent of the texture of soft-cooked onions with a little bit of a bite left to it. This is a great way to introduce people to kimchi without them having to eat it on its own.
