Hawaii-Style Cabbage Banchan

This is a staple Hawaii Korean BBQ side dish that you can make at home to compliment your barbecued meats.

- 1 pound cabbage chopped into large chunks (about ½ of a medium cabbage)
- 1 tbsp sesame oil
- ½ tsp salt
- ½ tbsp sesame seeds optional
Fill a medium pot with water and bring to a boil on high heat.
While the water is heating, remove the core of the cabbage and chop into large pieces, about 1-inch chunks.
Once the water is boiling, add the cabbage and cook for 1 to 2 minutes. Remove cabbage with a strainer or pour into a colander.
Rinse the cabbage with water to cool it. Squeeze as much water out of the cabbage as you can.
Put the cabbage in a medium bowl. Add the sesame oil and salt. Mix until the cabbage is well coated with the sauce ingredients, separating the cabbage while mixing.
Refrigerate for at least 30 minutes, up to 3 days. If using sesame seeds, add them right before serving and mix to combine.

Can I double this recipe to prep this recipe for several days of this dish?
This recipe can easily be doubled or tripled or quadrupled. Make sure you use a larger pot to blanch the cabbage or blanch it in batches if using the medium pot.
Does this work for other blanched vegetables?
The seasoning ingredients here do work with other blanched vegetables, but you will have to change the ratios depending on the type of vegetable you are using. I’ve used these seasoning ingredients for bean sprouts, broccoli, and spinach in different amounts. Let me know if there is a specific vegetable you would like to try using this blanching and seasoning method and I’ll work on a recipe!
Can I add minced garlic?
Yes, please feel free to add 1 to 2 tsp of raw minced garlic to your liking. I usually don’t add garlic because it isn’t typically used at the Hawaii Korean BBQ plate lunch restaurants, but it will be tasty with it!
