Bean Sprout Banchan

Try an easy and tasty Korean side dish using bean sprouts instead of making another side salad for your dinner.

Equipment

  • 1 medium saucepan
  • 1 small cutting board
  • 1 chef's knife
  • 1 Colander
  • 1 salad spinner optional
  • 1 medium bowl
  • measuring spoons

Ingredients
  

  • water for boiling
  • 6 ounces bean sprouts rinsed and drained
  • 1 to 2 garlic cloves finely minced
  • 1 ½ tsp sesame oil
  • ½ tsp salt
  • 1 tbsp sesame seeds toasted preferred

Instructions
 

  • Fill a medium pot with water and bring to a boil on high heat. While the water is heating, rinse and drain the bean sprouts and mince the garlic.
  • Add the bean sprouts to the pot and cook for 1 to 2 minutes. Pour the bean sprouts into a colander or remove with a stainless-steel metal strainer.
  • Rinse the bean sprouts with water to cool it. Squeeze out the water and drain well. Optional: use a salad spinner to get all the water off the bean sprouts.
  • Put the bean sprouts in a medium bowl. Add the minced garlic, sesame oil, and salt. Mix until the bean sprouts are well coated. (You can keep the seasoned beansprouts in the fridge for up to 2 days, but it will become watery the longer it sits in the seasoning.)
  • Right before serving, mix in the sesame seeds. Best served immediately after adding the seasoning.

Tips and Tricks
Does this work for other blanched vegetables?
This recipe can be used for other vegetables. You may need to adjust the seasonings with a different vegetable. It’s best to add a smaller amount of salt and sesame oil since you can always add more if it needs more seasoning. If you put too much at the beginning, you will not be able to take it out and it might be too salty.
Can I use this recipe for other types of sprouts?
I haven’t tried using this recipe for other types of sprouts. Mung bean sprouts are the closest to bean sprouts and might not need any changes to the seasoning in the recipe. Let me know in the comments if you’ve tried a different sprout and how it turned out!
How long do leftovers last in the fridge?
This is served best right after adding the seasoning. If you are planning on pre-cooking the bean sprouts, try blanching and draining the sprouts and refrigerate them without the seasoning. Add the seasoning right before you plan to serve the sprouts.
