10-minute Banana Walnut Oatmeal

Equipment

  • 1 medium saucepan 3-cups
  • measuring cups and spoons
  • 1 small cutting board
  • 1 knife
  • 1 small saute pan

Ingredients
  

  • ½ cup milk
  • 1 cup water
  • 1 cup old-fashioned rolled oats
  • 1 tbsp ground flax seeds
  • cup walnuts chopped
  • 2 apple bananas or 1 banana
  • 2 to 3 tbsp coconut palm sugar
  • 1 tbsp butter optional
  • ½ tsp cinnamon
  • honey for topping optional

Instructions
 

  • Pour the milk and water into a medium saucepan. Heat on high heat. Watch the liquid carefully and turn the heat to medium when the liquid starts to boil.
  • While the liquid is heating, add walnut pieces to a small saute pan on medium heat and toast for about 2 to 3 minutes.
  • When the liquid in the saucepan just reaches a boil, turn the heat down to medium and add the oats and flax seeds. Stir, and cook for 4 to 5 minutes.
  • Add the coconut sugar, bananas, butter (if using), and cinnamon to the walnuts, stirring occasionally until the sugar melts.
  • If not using butter, add the walnut banana mixture to the oats and stir.
  • If using butter, serve the oats in bowls and top the oats with the walnut banana mixture/glaze.
  • Drizzle honey on top if desired.

Notes

Tips and Tricks
Can I use a different type of oats?
Yes, quick cooking oats will work fine. It will be finished cooking before the walnuts finish toasting so start the walnuts before you heat your milk and water mixture.
Steel cut oats take a long time to cook, about 15 to 20 minutes. If you are willing to wake up earlier, go ahead and use the steel cut oats.
What other nuts will go well in this recipe?
Pecans, almonds, and macadamia nuts are wonderful substitutions for walnuts.
Can I use other types of sugar?
Yes. Palm sugar, brown sugar, honey, agave, and granulated sugar can all sit in for coconut palm sugar.
