10-minute Banana Walnut Oatmeal

It’s finally cold enough in Hawaii to need a hot breakfast to get you going in the morning. But it’s even harder to wake up early enough to cook. This oatmeal is done in 10 minutes and includes toasted walnuts, coconut sugar, and fresh bananas. It’s a great way to still have a slightly sweet breakfast after a weekend of holiday binging.

 

You can choose to mix the sweetened walnuts and bananas directly into the oatmeal or you can create a caramel-type sauce by using butter and topping it onto the oatmeal in the bowl. Either way, it’s a welcoming warm bowl that will keep you full and fuel your morning.

Why this recipe uses milk and water instead of just one

We like a thicker oatmeal that is closer to the texture of a bowl of congee/jook. Using just milk when cooking thick oatmeal makes the milk flavor strong. And water alone can leave the oatmeal feeling flavorless. A bonus with using water is saving some money with your food budget.

10-minute Banana Walnut Oatmeal

Equipment

  • 1 medium saucepan 3-cups
  • measuring cups and spoons
  • 1 small cutting board
  • 1 knife
  • 1 small saute pan

Ingredients
  

  • ½ cup milk
  • 1 cup water
  • 1 cup old-fashioned rolled oats
  • 1 tbsp ground flax seeds
  • cup walnuts chopped
  • 2 apple bananas or 1 banana
  • 2 to 3 tbsp coconut palm sugar
  • 1 tbsp butter optional
  • ½ tsp cinnamon
  • honey for topping optional

Instructions
 

  • Pour the milk and water into a medium saucepan. Heat on high heat. Watch the liquid carefully and turn the heat to medium when the liquid starts to boil.
  • While the liquid is heating, add walnut pieces to a small saute pan on medium heat and toast for about 2 to 3 minutes.
  • When the liquid in the saucepan just reaches a boil, turn the heat down to medium and add the oats and flax seeds. Stir, and cook for 4 to 5 minutes.
  • Add the coconut sugar, bananas, butter (if using), and cinnamon to the walnuts, stirring occasionally until the sugar melts.
  • If not using butter, add the walnut banana mixture to the oats and stir.
  • If using butter, serve the oats in bowls and top the oats with the walnut banana mixture/glaze.
  • Drizzle honey on top if desired.

Notes

Tips and Tricks
Can I use a different type of oats?
Yes, quick cooking oats will work fine. It will be finished cooking before the walnuts finish toasting so start the walnuts before you heat your milk and water mixture.
Steel cut oats take a long time to cook, about 15 to 20 minutes. If you are willing to wake up earlier, go ahead and use the steel cut oats.
What other nuts will go well in this recipe?
Pecans, almonds, and macadamia nuts are wonderful substitutions for walnuts.
Can I use other types of sugar?
Yes. Palm sugar, brown sugar, honey, agave, and granulated sugar can all sit in for coconut palm sugar.
