This easy chicken dish with Italian seasoning needs only 5 ingredients and less than 30 minutes to make. You can easily cut this recipe in half if cooking for just one or two people and it’s only 15 minutes tops.
We love chicken thighs because they don’t dry out like chicken breasts. They also have more iron, though not as much iron as chicken drumsticks. It’s a great way to get some protein into your diet without deep frying your chicken.
If you want to make a quick pan sauce for the chicken, use the pan drippings and fond at the bottom of the pan! It’s a very easy and simple chicken pan sauce: add 1 cup of chicken broth to deglaze the pan. Then, simmer until the sauce is thickened. If you don’t want gravy, use up all of that flavor by sauteing your vegetables in the pan right afterwards and add some chopped garlic. This makes your vegetables taste savory and garlicky without much effort!

You will probably not find Italian seasoning in Italy because it was probably made in America to capture the blend of all the seasonings available in Italy that was not easy to get when Italian immigrants came over the Atlantic Ocean. So, if Italian seasoning is something that you don’t typically buy, don’t worry. Just mix your own at home with some or all of these seasonings: thyme, basil, oregano, rosemary and fennel.

Italian Herb Chicken Thighs

- 1 chef's knife
- 1 large cutting board
- 1 large plate
- 1 10" saute pan or 11" chicken fryer
Ingredients
- 2 tbsp olive oil or sunflower oil
- 2 pounds boneless, skinless chicken thighs fat trimmed off (about 7 to 8 thighs)
- ½ tsp salt
- ½ tsp ground black pepper
- 2 tbsp dried Italian seasoning
Instructions
- Heat the pan on medium high heat. Add 1 tablespoon of olive oil or sunflower oil.
- Season both sides of the chicken thighs with salt, pepper, and Italian seasoning.
- Place 4 to 5 chicken thighs spread out in the pan. Sear the chicken and DO NOT MOVE IT for 8 minutes. If you put all the chicken in the pan all at once, it will boil rather than sear.
- Flip the chicken thighs and cook for another 2 minutes. Remove chicken thighs from the pan.
- Add 1 tablespoon olive oil and repeat steps 3 and 4 with the remaining chicken thighs.
- Serve with white rice, mashed potatoes, or noodles, and sauteed vegetables.
