You can get a creamy salad dressing using kiwi fruit, ginger, and heart-healthy olive oil. There’s no need for any mayonnaise or yogurt at all. Just a little honey, vinegar, garlic, and salt is all it takes. Plus blending everything together in a blender, food processor, or Magic Bullet makes it easy and fast!

Just two kiwi fruits have all the Vitamin C a person needs in a day. It also has fiber so it aids in digestion and helps to keep you full. Kiwi also helps to manage blood pressure because of Vitamin K. In addition, since many people in the United States are deficient in Magnesium, you should pick up some kiwi fruit to boost your Magnesium levels. There are even more micronutrients and other components of kiwi that provide health benefits, so much so that kiwi is considered a superfood.
There’s almost no reason that I can think of to skip eating a kiwi other than cost. The golden kiwi is more expensive than the green kiwi. If you pick up the green kiwi at a warehouse store, it will be much cheaper than getting it in a grocery store.

Adding ginger to the kiwi fruit helps with digestion. It also has anti-inflammatory and antioxidant properties. I know some people have a hard time with the spiciness of ginger. It might even help with lowering cholesterol levels, a great thing if you’re eating this dressing with steak as your protein in your salad. Ginger may also help with regulating blood sugar.

Kiwi Ginger Dressing

- 1 chef's knife
- 1 large cutting board
- 1 blender or food processor
- 1 medium stainless steel mesh strainer
- 1 medium bowl
Ingredients
- 2 kiwi fruit peeled and roughly chopped
- 1 inch fresh ginger root peeled and steamed in microwave for 10 seconds
- 1 clove garlic chopped
- ¼ tsp salt
- 1 tbsp honey
- 1 tbsp red wine vinegar
- ¼ cup olive oil
Instructions
- Blend kiwi and ginger in a blender or food processor until almost smooth. Strain mixture through a metal mesh strainer into a bowl to get out any fibers that did not break down. Put strained kiwi ginger mixture back into the blender or food processor.
- With the chopped garlic on the cutting board, pour salt on top and use the flat side of the knife to smash the salt into the garlic several times to form a paste. You will have to scrape the garlic salt mixture into a mound 1 to 3 times and smash the mixture down to create a smooth paste.
- Add the garlic salt paste, honey, vinegar, and olive oil to the blender or food processor and blend until well combined. Serve on a salad or use as a marinade for meat or chicken. Makes enough dressing for 4 main dish salads.
